Cherry Tomato Salad with Blue Cheese


As we head toward summer I thought this would be the perfect time to talk salads!!

I love salads but get bored eating the same old thing. So, this was the perfect recipe for something a little different!

I am in heaven!! The perfect blend of greens, cheese, & beans. It’s so fresh, light, & easy!

Of course my kids would show disgust if I even mention they try it but that’s ok! This is a mom salad & I’m perfectly fine keeping it all to myself!!

I changed just one thing in this recipe. I didn’t have arugula so used spinach instead.
Cherry Tomato Salad with Beans, Blue Cheese, & Arugula

2-3 handfuls cherry tomatoes, halved
1/2 can garbanzo beans, drained & rinsed
1/4 cup diced onion
2 T white balsamic vinegar
1 1/2 T olive oil
arugula or spinach
blue cheese, crumbled
salt & pepper

In a medium bowl place the tomatoes, beans, & diced onion. Drizzle with olive oil & vinegar & toss lightly to coat. Season with salt & pepper.

Place a handful of spinach or arugula on a plate & top with tomato mixture. Add crumbled blue cheese on top & enjoy!!

  1. About a year ago, I made my first salad dressing from sctrcah – using pretty much exactly this process – and haven’t picked up a bottle of pre-made ever since! Once you get the hang of it – and DOLS is a great way to remember – you can go all over the place with whatever citrus, mustard, vinegar, oil, etc. you have on hand! Great post, Zoe.

    1. I used to buy salad dressing from the store all the time but now that I know how to make my own I like it so much better! It’s so easy to make & when I make my own I can eat much cleaner. There’s so much junk in those store bought salad dressings!!
