Do you ever watch the “Food Network” & drool? Some of their recipes look amazing! If only there was enough time to make every single recipe that was drool worthy!!
Well, if you watch Ina Garten then you know how amazing her recipes look! I seriously could eat everything she makes!! Her cooking is exactly the type of foods I covet – simple, fresh, & tasty!
A few years ago I saw a “Creamy Cucumber Salad” recipe on her show. It looked incredibly amazing to eat on a hot summer day with any kind of grilled protein! The only downside to the recipe is that it was not very healthy – bummer! It called for full fat yogurt & sour cream. A little too calorie rich for my waist line! So, I decided to tweak a few ingredients & healthify (I’m sure that’s not even a word!) it!!
Substituting nonfat Greek yogurt & light sour cream did the trick! Now you can enjoy this creamy, cool, cucumber salad without all the calories!
Healthy Creamy Cucumber Salad
4 cucumbers thinly sliced (I used my handy dandy mandoline as seen in the picture above)
1 small red onion, thinly sliced
3 cups nonfat, plain Greek yogurt (I like the Costco Kirkland brand)
1/2 cup nonfat sour cream
2 T. champagne vinegar or white wine vinegar
1/2 cup fresh dill, minced
kosher salt & pepper
Mix cucumbers, red onions, & salt in a bowl. Pour them into a colander & suspend it over a bowl. Wrap the bowl with plastic wrap & place in the refrigerator overnight.
The next day wrap cucumber mix in paper towels & roll up to absorb most of the liquid.
Place the cucumbers, yogurt, sour cream, vinegar, dill, & pepper in a large bowl & toss well.
Refrigerate for ~ 2 hours & serve.
