Healthy Granola Bars

 

My kids are always starving! Can you relate?

I’ve got a five year old & eight year old – both boys!! I know the time is coming when my grocery bill will be double what it is now!!

My sister gave me this recipe a while back & I make it every week – sometimes a double batch!! 😀 I put these granola bars in school lunches & my boys eat them for an after school snack.

After you let these cool break them up, put them in freezer bags & freeze. We actually really like them frozen!

HEALTHY GRANOLA BARS

1/2 cup peanut butter

1/3 cup agave syrup or honey

1 egg

2 T. vegetable oil

1 tsp. vanilla

1/4 cup brown sugar

1/2 tsp. salt

3 cups oats

1/3 cup chocolate chips

Preheat oven to 350 degrees. Coat 9×13 pan with cooking spray. Mix peanut butter, agave syrup, egg, canola oil, vanilla, brown sugar, and salt. Then mix in oats & chocolate chips. Pour into pan & pat out evenly (it’s easier to Kay out a sheet of wax paper over the mixture to flatten it out). Bake 15-20 minutes until edges start to brown. Cool completely before cutting into bars. Store in fridge or freezer to keep them longer.
