Simple, easy recipes are a go-to for me!
With two kids who are always hungry when dinner’s still 20 minutes away, I need either make ahead or quick meals!
I recently ordered the “Fixate” cookbook because I’m currently doing the 21 Day Fix program & am seeing & feeling some pretty awesome results! So, I flipped through the cookbook & decided to try out “Quinoa & Black Bean Salad”.
On the weekend I’ll often make a quinoa salad & then serve it over chopped lettuce or spinach during the week. Then I’ll add some chopped chicken & lunch is all set to go! Makes 3-4 lunches for the week!
Quinoa & Black Bean Salad
1/3 cup lime juice
1 T ground cumin
1 T salt
1/3 cup olive oil
2 cans black beans, drained, rinsed
4 T red wine vinegar
2 cups water
1 cup dry quinoa
1 red pepper, chopped
1 orange/yellow pepper, chopped
1 (10 oz) bag frozen corn, thawed
1 bunch fresh chopped cilantro
Pepper to taste
Combine lime juice, cumin, salt, olive oil & whisk.
Combine beans, vinegar, & pepper; mix well. Set aside.
Bring water to boil & add quinoa. Reduce heat & cook covered 10-12 minutes until water is absorbed. Remove from heat. Cool 15-30 minutes.
Add all ingredients together & toss to blend.
Cover & place in refrigerator until ready to serve.
