Don’t sandwiches for lunch get so boring?
This last weekend we met up at our family’s cabin (Camano Island, Washington) with some college friends to go crabbing. We meet up every summer & have the best time hanging out at the beach, cooking yummy food, & laughing. We laugh a lot – love my buddies!!
Each year we pack up to go to the beach for the day. It’s tough to pack a lunch that’s not too complex but that’s also light & tastes good. We all get tired of sandwiches so this year I was on a recipe mission to make something else!!
I did a Pinterest search & found tons of recipes for wraps!!
I lightened up this recipe a little bit to make it healthier & it tasted great!
Simple Grilled Chicken Wrap
Makes 6 wraps
Flat Out wraps
2 cups Spinach
1 cup Black Beans
4 Grilled chicken breasts (or dice up a cooked rotisserie chicken)
3/4 cup Tomato (diced)
1/4 cup Red onion (minced)
1 Avocado (chopped)
1/2 cup Nonfat Greek yogurt
1/4 cup Light sour cream
Add diced grilled chicken, black beans, tomatoes, red onion, avocado, nonfat Greek yogurt, & light sour cream in a bowl. Stir to combine. Add salt & pepper to taste. Lay out Flat Out wrap & place spinach on one end of wrap. Top with 1/2 cup chicken mixture & roll up.
