Healthy Slow Cooker Meals

It’s fall & time to pull out the crockpot!

With our busy schedules & after school activities, the crock pot is a major time saver in our house. It’s so easy to make a meal plan, hit the grocery store, & prep foods over the weekend!

Here are five meals that I’ve tested out! Most of these meals I’ve been making for several years & they’re great!

You can always substitute or add ingredients if needed!

This menu feeds 2 adults & 2 kids. You may need to adjust the ingredients to work for your family! The soups will feed more & if you have leftovers put them in ziplocks & freeze for another meal.

Okay let’s get started! I’m providing a grocery list & the recipes below!

Chalupa

From “Fix It & Forget It Cookbook”

INGREDIENTS:

3 lb. pork roast

1 lb. dry pinto beans

2 garlic cloves, minced

1 T. ground cumin

1 T. dried oregano

2 T. chili powder

1 T. salt

4 oz. can chopped green chiles

DIRECTIONS:

  1. Cover beans with water & soak overnight in slow cooker.
  2. In the morning remove beans & save the soaking water!! Put pork roast in the bottom of slow cooker & add remaining ingredients, including the beans & soaking water. Add more water if needed to cover all the ingredients.
  3. Cook on High 1 hour & then on Low 6 hours. Remove meat & shred with two forks. Return meat to slow cooker.
  4. Cook on High 1 more hour.

You can serve this a variety of ways!! I’ll often serve it over a salad & the kids will wrap it up in tortillas with cheese. You could also make a Mexican bowl by layering rice, cheese, tomatoes, lettuce, & chalupa.

Vegan Black Bean Soup

INGREDIENTS:

1 large onion, chopped

2 stalks celery, chopped

2 carrots, chopped

2 cloves garlic, minced

1 T chili powder

2 T cumin

pepper

4 cups vegetable broth

2 cans black beans

1 can crushed tomatoes

Pinch of cayenne if you like a little spicy heat!!

DIRECTIONS:

  1. Add all ingredients to crock pot.
  2. Cook for 6 hours on low.
  3. After six hours, blend soup in blender until smooth (I do this in batches), add back in to crock pot & heat for 15 more minutes.

Serve with nonfat Greek yogurt or sour cream.mYou can also serve with tortilla chips.

 BBQ Chicken Sandwiches

Serves 4-5

INGREDIENTS:

1/2 cup water

4 chicken breasts

14 oz. bottle BBQ sauce

Buns

DIRECTIONS:

  1. Place water in bottom of slow cooker. Add chicken. Pour BBQ sauce over top.
  2. Cover. Cook on low 6-8 hours.
  3. Serve on buns.

White Chicken Chili

From “Fix It & Forget It Cookbook”

INGREDIENTS:

3 15 oz. cans Great Northern Beans, drained

2  diced chicken breasts

1 cup chopped onion

1 1/2 cups yellow, orange, or red pepper

1 can diced green chiles

2 garlic cloves

2 t. ground cumin

1/2 t. salt

1/2 t. dried oregano

2 1/2 cups chicken broth

sour cream or nonfat Greek yogurt

shredded cheddar cheese

tortilla chips

DIRECTIONS:

  1. Combine all ingredients except sour cream, cheese, & chips in slow cooker.
  2. Cover. Cook on low 8 hours.
  3. Ladle into bowls & top with sour cream, cheese, & chips.

Easy & Delicious Turkey Breast

From “Fix It & Forget It Cookbook”

INGREDIENTS:

1 turkey breast – I buy a boneless turkey breast in the freezer section

1 envelope dry onion soup mix

1/2 cup orange juice

1/2 teaspoon salt

1/4 teaspoon pepper.

DIRECTIONS

  1. Place turkey in slow cooker
  2. Combine remaining ingredients & pour over turkey.
  3. Cover. Cook on low 6-8 hours.

I serve this with salad, green beans, mashed potatoes, & bread.
